This recipe is made with shelf-stable items, as well as a sweet potato. When you don't think you have much in the house, you might be able to make these burgers. They are tasty and rich in fiber and plant-based protein. 

 

Ingredients


Sweet_potato – 1 medium to large Black_beans – 1 (15.5 oz) can Quinoa – 1 cup, cooked (⅓ cup raw*) Cumin – 1 teaspoon Paprika – 2 teaspoons Salt – ½ teaspoon Oil – 1 Tablespoon canola, avocado, sesame or light olive oil (or cooking spray)

Instructions

Step 1
Poke holes in the skin of the sweet potato with a fork (to allow steam to escape) and microwave sweet potato for 6-10 minutes or until very soft (times will vary based on your microwave).
Step 2
While the potato is cooking, drain and rinse the black beans and add to a bowl. Mash with a potato masher or fork.
Step 3
Once cooled, cut the sweet potato in half and scoop out the insides. Add to the bowl with the beans.
Step 4
Add the quinoa, along with the cumin, paprika, and salt to the bean and potato mixture. Mix until smooth until well combined.
Step 5
Put a frying pan on the stove over medium heat. Add a small amount of oil to the pan – just enough to coat it. Alternatively, spray the pan heavily with cooking spray.
Step 6
Scoop mixture with a ¼ cup measuring cup and form into patties. Pan sear patties ~6-8 minutes per side, or until golden brown.
Step 7
* To cook quinoa, combine ⅓ cup rinsed, raw quinoa with ⅔ cup water in a small pot. Bring to a boil, then reduce heat to a simmer, cover, and cook until water is absorbed, about 10 minutes.

Notes

*Cooking quinoa: Add 2 parts water and 1 part quinoa into a sauce pan (for example 2 cups water + 1 cup quinoa or 1 cup water + ½ cup quinoa). Bring to a boil, cover and reduce to a simmer, cooking until water is absorbed and quinoa is fluffy, about 15 minutes.

Enjoy this patty like you would a typical burger or on it’s own. Our favorite toppings include plain tzatziki , shredded cheese, lettuce and tomatoes!
