Rather than a steamed dumpling, potstickers have a pan-seared, crispy edge. The contrast between the soft interior and the crispy exterior is delicious. Legend has it that potstickers came into being when an Emperor in the Song Dynasty in China was boiling dumplings, he left them unattended too long and they stuck to the bottom of the pan. He served them to his guests anyways, and they were a hit. Try this recipe with our Teriyaki Dipping Sauce. 

If you decide to make this recipe with tofu, we recommend pressing the tofu with a heavy object (such as a cast-iron skillet- put the tofu on a plate, and place a skillet on top) to remove the water. 

 

 

Ingredients


Protein - 8 oz lean ground turkey, chicken or pork, or very firm tofu, crumbled Scallions - 3, finely chopped Ginger - 1 Tablespoon, fresh, finely chopped or 1 teaspoon, powdered Garlic - 1 teaspoon, minced or ⅓ teaspoon, powdered Soy_sauce - 1 teaspoon Sesame_oil - ½ teaspoon Wonton_wrapper - 24 wonton wrappers (find in fresh produce area of most grocery stores) Oil - 2 ½ Tablespoons avocado, sesame, canola oil, peanut, or light olive oil Water - for steaming Optional - Teriyaki Dipping Sauce

Instructions

Step 1
In a bowl combine ground protein (turkey, chicken, pork, tofu), scallions, ginger, garlic, soy sauce, and sesame oil. Mix well.
Step 2
To assemble wontons: Fill a small bowl with a few tablespoons water, set aside. Lay out a few of the wontons (keep remaining covered with plastic wrap).
Step 3
Place 1 teaspoon filling in the middle.Using your fingers, lightly wet the edges of the wonton with water. Bring 2 opposite corners together to form a triangle and firmly press the edges together to form a seal. Assemble remaining wontons.
Step 4
Heat 1 Tablespoon oil in a large skillet over medium-high heat. Place 8 to 10 dumplings in the pan and cook until browned, about 2 minutes per side.
Step 5
Pour in 1 cup of water, cover and cook until the dumplings are tender and the turkey is cooked through, about 5 minutes. Repeat for remaining dumplings. Serve with Teriyaki Dipping Sauce.
