Breakfast is the most important meal of the day but it can often be loaded with sugar. This can be problematic for moms facing gestational diabetes. Steel cut oats are a healthy breakfast option that are packed with fiber, which helps moderate any blood sugar spikes. Steel cut oats are a whole grain that are rich in fiber as well as protein! Protein is essential for the growth and repair of mom and baby's muscles and tissues. The protein, zinc, and omegas are an added bonus that will further support the mom and baby’s health! 

This easy power oat recipe is suited for both a healthy mom and baby! The recipe can easily be modified to be baby and kid-friendly and include their favorite fruit and toppings. Refer to the recipe video for variations on the oats for babies 6 months -1 year old.

 

Ingredients


Oats - ½ cup, quick steel cut Milk - 1 cup, 2% fat Banana - 1 medium sized Raspberries - ¼ cup fresh or frozen Walnuts - 2 Tablespoons Pumpkin_seeds - 1 Tablespoon Toppings - Optional: blueberries, strawberries, blackberries, extra banana, ground flaxseed, cinnamon, nutmeg, honey. (Fruit can be frozen)

Instructions

Step 1
Put the oats and milk into the pot on the stove. Turn the burner on to low-medium heat.
Step 2
Chop the banana into the oats and smash it lightly with a fork.
Step 3
Let the oats cook for about 5 minutes, stirring them every so often.
Step 4
When the milk is fully absorbed and the oats appear fluffy, they are ready to transfer to a bowl.
Step 5
Add walnuts, pumpkin seeds, and raspberries to the bowl. Or other optional toppings.
Step 6
Enjoy!

Notes

Tips:

  • If you do not have access to quick steel cut oats, quick oats are a perfect alternative that are still rich in fiber. 
  • Dairy milk can be substituted with a plant based milk such as almond milk, soy milk, rice milk, oat milk. Be sure to choose a fortified plant milk so all essential vitamins and nutrients are intact.
