Basic Vinaigrette

Ingredients

  • 2/3 cup oil (canola or olive)
  • 1/3 cup vinegar (or another acid)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • Seasonings (see notes)

Instructions

  1. Put ingredients in a container with a tight lid. Shake until well mixed.
  2. Refrigerate for up to 1 week if using fresh ingredients like garlic, onion, parmesean, or fresh herbs; OR up to 3 weeks if using fried herbs, powders, or deeds.

Notes

Seasonings 

  • 1-2 tablespoons fresh chopped herbs 
  • 1/2-1 teaspoon dried herbs-basil, oregano, dill, parsley, ect. 
  • 1/2-1 teaspoon spice, seeds, fruit zest, Worcestershire, mustard, other flavorings
  • 1-2 teaspoons sugar, honey, agave, nectar 
Vinaigrette Ideas:
Dressing Vinegar or Acid Oil Seasonings
Italian  Red wine vinegar Olive oil oregano, basil, garlic, onion powder
Balsamic Balsamic vinegar Olive oil Basil, garlic, chives
Citrus Lemon, orange, or lime juice  Canola oil Fruit zest, mint, garlic, onion
Sesame Rice wine vinegar Canola oil and a ittle sesmame oil Sesame seeds, gigner, garlic, onion powder
Honey Mustard Cider vinegar Olive oil 2 Tbsp mustard, 2 Tbsp Honey, chives, parsley
Caesar Lemon juice Olive oil 2 Tbsp grated Parmesan cheese, Worcestershire sauce, mustard, garlic
Tomato Cider vinegar Canola oil 1 Tbsp ketchup, 2 tsp sugar, 1 tsp minced garlic, 1/2 tsp mustard

For a Creamy Dressing: Add 2-3 tablespoons low-fat mayonnaise or plain yogurt
