Quick and Creamy Brown Rice Pudding

  • 1 1/2 cup instant brown rice
  • 3 fat-free or 1% milk, almond milk, or coconut milk
  • 2 tablespoons sugar or honey (may also use sugar substitutes is desired)
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • 1/2 cup low-fat vanilla Greek yogurt
  • ¼ cup raisins
  • ¼ cup toasted nuts


  1. In a medium sauce pan add Instant rice, milk, cinnamon, and honey. Simmer 20 minutes until rice is tender. Remove from heat and let sit 15 minutes.
  2. Stir in vanilla, Greek yogurt, raisins, and nuts.
  3. Serve warm with additional cinnamon for garnish.
