Quick and Creamy Brown Rice Pudding

- 1 1/2 cup instant brown rice
- 3 fat-free or 1% milk, almond milk, or coconut milk
- 2 tablespoons sugar or honey (may also use sugar substitutes is desired)
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
- 1/2 cup low-fat vanilla Greek yogurt
- ¼ cup raisins
- ¼ cup toasted nuts
- In a medium sauce pan add Instant rice, milk, cinnamon, and honey. Simmer 20 minutes until rice is tender. Remove from heat and let sit 15 minutes.
- Stir in vanilla, Greek yogurt, raisins, and nuts.
- Serve warm with additional cinnamon for garnish.
