Brussel Sprout Bites

  • Brussel sprouts – 1 lbs.
  • Oil – 1 tablespoon (olive oil, canola oil, avocado oil etc.)
  • Goat cheese (any flavor) – 2 oz
  • Golden raisins or dried cranberries – ¼ cup
  • Fresh herbs (dill, basil, parsley) – about 2 tablespoons


  1. Preheat the oven to 400°F.
  2. Trim the ends off the Brussel sprouts, remove outside leaves and cut in half lengthwise.
  3. Place Brussel sprouts onto a baking sheet. Drizzle with oil and toss to coat.
  4. Bake for 20 minutes or until tender but not too soft. Set aside to cool.
  5. Once the brussels sprouts are cooled, top with goat cheese, fresh herbs, and a golden raisin or cranberry (or your favorite toppings).
