Brussel sprouts are rich in antioxidants, contain omega-3 fatty acids (healthy, anti-inflammatory fats), as well as fiber. This is a truly nutritious (and creative) snack or appetizer to serve to friends and family. 

Ingredients


Brussel-sprouts – 1 lb Oil – 1 Tablespoon avocado, canola, sesame or light olive oil Goat-cheese - 2 oz (herb, honey or plain goat cheese) Dried-fruit - ¼ cup golden raisins or dried cranberries Herbs - 2 Tablespoons dill, basil, parsley or chives

Instructions

Step 1
Preheat the oven to 400°F.
Step 2
Trim the ends off the Brussel sprouts, remove outside leaves and cut in half lengthwise.
Step 3
Place Brussel sprouts onto a baking sheet. Drizzle with oil and toss to coat.
Step 4
Bake for 20 minutes or until tender but not too soft. Set aside to cool.
Step 5
Once the brussels sprouts are cooled, top with goat cheese, fresh herbs, and a golden raisin or cranberry (or your favorite toppings).
