Bean Burgers >>> Black beans - 2 (15.5oz) cans White onion - 1 small Broccoli - 1 head Garlic - 3 cloves Oats - ½ cup Eggs - 1 Salt - ¼ teaspoon Chili powder - 1 teaspoon BBQ sauce, ketchup, or Sriracha - 2 tablespoons Fries >>> Yuca - 1 medium (If you are looking for a lower carbohydrate option, buy 1 rutabaga. We will show you how to cut it) Olive oil - 1 tablespoon Optional Toppings >>> Avocado Low carb/whole grain roll Lettuce Fried egg Salsa Hot sauce
Preheat oven to 400 degrees fahrenheit
Cut off both ends of the yucca root. Then cut them into 3 to 4-inch rounds, depending on the length of the Yucca
Make a shallow cut lengthwise into the skin of the yucca. Work your thumbs under one side of the cut. Once you’re underneath the peel, you can work your thumbs down the length of the root, peeling the skin off
Chop the yuca into ½ inch sticks. Add to the pan and drizzle with olive oil. Bake for 30 minutes or until crispy.
While the fries bake, open the cans of black beans, drain, rinse and add to a bowl. Mash with a fork or potato masher.
Finely chop the onion and broccoli and add to the bowl. Mince the garlic and add to the bowl
Blend the oats in the blender into a flour-like consistency. Add to the bowl.
Add the egg, chili powder, and sauce (BBQ, ketchup, or sriracha) to the bowl.
Mash together until a dough forms. Form the dough into 4 balls and flatten into patties.
Preheat a frying pan with canola oil over medium-high heat. Cook the patties 4 minutes per side until golden brown.
Serve burgers with or without a bun and topped with your favorite sauce, vegetables, or even a fried egg! Enjoy the fries with the sauce you choose for the burgers (BBQ, sriracha, or ketchup).
