Beans are an excellent source of protein and a great substitute for animal protein. This meal contains all the components of a healthy plate: the beans are both protein and a starch, egg and feta for protein, and lots of vegetables in the salad. 

Ingredients


Lemon - 1 Egg - 1 large White_kidney_beans - 1 can (15.5 oz) (or bean of your choice) Oats - ½ cup (or ¼ cup flour) Onion - 1 small Garlic - 1 clove Basil - ½ bunch (or any fresh herb) Italian_seasoning - 1 Tablespoon Salt - ½ teaspoon Pepper - ½ teaspoon Olive_oil - 2 Tablespoons Cherry_tomatoes - 1 pint (or 1 large tomato chopped) Pitted_kalamata_olives - 2 oz (⅓ of a 6 oz jar) Cucumber - 1 medium Basil - ½ bunch Olive_oil - 1 Tablespoon Feta_cheese- optional Lemon_juice - optional

Instructions

Step 1
To make the bean burger patties, first squeeze the lemon into a bowl. Crack an egg into the bowl. Open the can of white kidney beans, rinse using a colander, and add them to the bowl.
Step 2
Place the oats into a blender or food processor and blend until a flour like consistency. Add the oat flour to a large mixing bowl.
Step 3
Chop the onion and basil and mince the garlic and add to the bowl. Add the italian seasoning, salt, and pepper to the bowl. Mash mixture with a jar until a paste starts to form.
Step 4
Heat a frying pan with olive oil on medium-high heat. Form the burger patties using a 1/4 measuring cup and scooping the bean mixture onto the pan. Flatten the burger patties and cook each burger patty for 5 minutes. Flip, and cook for 5 min.
Step 5
While the bean patties are cooking, make the salad. Finely chop the tomatoes, cucumber and the rest of the basil and add to the bowl. Add the olives and olive oil to a bowl and mix until combined.
