Ingredients


Cucumber - ½ large Fresh dill - ⅓ bunch (can substitute parsley) Garlic - 2 cloves Lemon - 1 medium/large Greek yogurt, 2%, plain - 1 cup Olive oil - 1 Tablespoon (if using low fat yogurt) Salt - ½ teaspoon Pepper - ½ teaspoon

Instructions

Step 1
Chop the cucumber and dill and mince the garlic. Add all 3 to a bowl.
Step 2
Juice the lemon and add to the bowl.
Step 3
Add the yogurt, olive oil (if using), salt and pepper to the bowl. Whisk all ingredients together.
Step 4
Chill for at least 1 hour before serving.

Notes

Tzatziki is great as a dip for vegetables and pita, as a spread on sandwiches, and as a topping for falafel.
