Potatoes are a great source of carbohydrate that fuels our bodies with energy. This is an easy and quick to make version of this starchy vegetable. Serve it as a side dish, or as the star of the show with toppings like guacamole, pico de gallo, salsa, shredded cheese, sour cream, and ground meat or Beyond Meat (a vegetarian meat alternative). Click here to access the original recipe!

Ingredients


Potato - 1 medium

Instructions

Step 1
Scrub your potato under running water.
Step 2
Prick it with a fork.
Step 3
Place the potato on a microwave-safe place, and microwave for 5 minutes.
Step 4
Flip it over, and microwave it for about 5 more minutes. If it meets no resistance (if the fork goes through the whole potato very easily), it is done. Otherwise, continue to microwave it in 1-minute increments.
Step 5
Let the potato cool for just a few minutes. Cut it lengthwise and serve with toppings of choice.
