These bars are fun and easy to make and can be completely customized. Great to pack in a school lunch, for a hike or for a day at the park.
Ingredients
Walnuts
- ½ cup
Almonds
- ¼ cup
Nut_Butter
- ½ cup, unsalted
Honey
- ¼ cup
Oil
- 1 Tablespoon canola oil, avocado oil, or any other neutral oil
Vanilla_Extract
- ½ teaspoon
Raisins
- ¼ cup
Cranberries
- ½ cup dried cranberries, 50% less sugar
Coconut
- 2 Tablespoons shredded coconut, unsweetened
Oats
- ¾ cup, quick or old fashioned
Cereal
- ¾ cup puffed rice cereal
Instructions
Step 1
Line an 8x8 inch baking pan with a piece of parchment paper ~20 inches long (it should hang over so that it can be folded on top of the bars.
Step 2
Put a large skillet on the stove and turn heat to medium high. Once hot, add the nuts, spreading them into a single layer. Stir frequently until they are golden brown and aromatic. Remove from pan and put in medium bowl.
Step 3
Put the peanut butter into a small bowl and soften in the microwave, ~30 seconds. Add the honey, oil, and vanilla extract and stir.
Step 4
Add the fruit, coconut, oats and cereal to the medium bowl with the nuts and mix.
Step 5
Pour the peanut butter mixture over the fruit and nut mixture and mix until combined.
Step 6
Add the mixture to the 8x8 baking pan, spreading it evenly. Fold the parchment paper over the mixture and push down firmly to compact the bars.
Step 7
Cover with plastic wrap and refrigerate until solid, at least 4 hours.
Step 8
Cut into 16 even squares.
Notes
Substitute other nuts, nut butters (such as almond butter or sunflower butter), and dried fruit to make this uniquely yours. Add spices such as cinnamon or chili powder for a kick.
