When cooked down slowly, balsamic vinegar turns into a sweet, thick glaze. It is used in this recipe to drizzle the flatbreads. Balsamic glaze is a product that you can buy in an Italian market, but why not try to make it at home?

Ingredients


Flour - 1 cup whole wheat flour Yogurt - 1 cup 2% Greek Yogurt Baking_soda - ½ teaspoon Balsamic_vinegar - 1 cup Peach - 1 sliced Arugula - 3 cups Cheese - ¼ cup goat cheese (or feta, mozzarella, or parmesan)

Instructions

Step 1
Preheat oven to 400°F.
Step 2
Heat the balsamic vinegar in a saucepan over medium-high heat. Bring to a boil, reduce the heat to medium and simmer. Cook for 20 minutes or until thickened. Let cool.
Step 3
Combine flour, salt, and baking soda into a bowl. Add the greek yogurt and mix with your hands until a dough forms. Knead the dough for about 1 minute and then roll into a ball. Put dough back in the bowl and refrigerator for at least 1 hour.
Step 4
Once the dough has cooled, flour a surface and roll out 3 pieces with a rolling pin until very thin. Keep checking to make sure that it is not sticking to the counter. If it keeps sticking, add more flour.
Step 5
Spray 2 baking sheet with cooking spray. Place the three, rolled dough pieces on a baking sheet. Bake for 12-15 minutes or until slightly brown or until the dough firms.
Step 6
While baking, thinly slice the peach.
Step 7
Once done, top each pizza with arugula, goal cheese, sliced peach, and balsamic glaze.
