Creamed Spinach

  • 75 grams heavy cream
  • 100 grams yellow onion, diced
  • 255 grams spinach, chopped
  • 5 grams garlic, minced
  • 30 grams butter
  • 15 grams olive oil
  • 1 gram nutmeg, optional
  • Salt and pepper, to taste


  1. Heat a large skillet over medium heat
  2. Add olive oil, butter, garlic and onion; cook and stir until tender, about 5 minutes
  3. Add chopped spinach and and stir to wilt
  4. Stir in the heavy cream and cook down until liquid is slightly reduced and has begun to thicken, about 10-15 minutes
  5. Season to taste with salt and pepper, and an (optional) dash of nutmeg
