This hearty sandwich is sure to keep you full and will help you get in at least 1 serving of vegetables. Using hummus as a spread adds protein, fiber and a whole lot of flavor!

Ingredients


Bread - 2 slices sourdough bread Hummus - 2 Tablespoons Feta - 2 Tablespoons feta cheese Cucumber - ¼ large or ½ small Romaine - 1 large leaf Alfalfa_sprouts - ¼ cup

Instructions

Step 1
Spread 1 Tablespoon of hummus on each slice of bread.
Step 2
Crumble Feta and add sprinkle over 1 slice of bread.
Step 3
Slice the cucumber lengthwise into slabs. Cover the feta with cucumber slabs.
Step 4
Fold the lettuce leaf in half and cover the cucumber layer.
Step 5
Top with alfalfa sprouts and second slice of bread.

Notes

You can substitute any hummus variety, bread variety and vegetables that you want! There are endless possibilities for this delicious sandwich.
