Cranberries are high in resveratrol, an antioxidant that helps decrease inflammation. Cranberries also help prevent urinary tract infections. For the pre-made crust in this recipe, check out the Honey Oat Crust recipe here.

Ingredients


Cranberry-Juice - ¼ cup, unsweetened Honey - ¼ cup Oil - 2 tablespoons Coconut oil Eggs - 2 large, (1 yolk and 1 full egg) Salt - ⅛ teaspoon

Instructions

Step 1
Add cranberry juice, honey, coconut oil, 1 egg, and 1 egg yolk to a saucepan. Whisk the ingredients together until completely mixed and frothy.
Step 2
Heat saucepan on low, continuing to whisk constantly until the mixture just starts to gently boil. Turn off heat and continue whisking until the mixture is thick.
Step 3
Pour curd into a serving bowl or pre-made crust and let sit in the fridge for at least 2 hours.

  • Cranberries, dried - ¼ cup 
  • Nuts - ¼ cup  
  • Orange - zest of 1 orange
