Snickerdoodles are a traditional American cookie rolled in cinnamon before baking to make them delicious. This recipe contains nut butter for added protein.

Ingredients


Nut_butter – 1 cup peanut butter, almond butter or sunflower butter Egg – 1 large Cinnamon – ½ teaspoon Sugar – ⅓ cup (*can use sugar substitute if desired, see below) Vanilla – vanilla extract, ½ teaspoon (optional)

Instructions

Step 1
Preheat oven to 350°F.
Step 2
Add all ingredients to a large bowl and mix until combined.
Step 3
Line a baking sheet with parchment paper.
Step 4
Scoop out 1 heaping Tablespoon of batter at a time and form 12 balls. Place on a baking sheet and press down until they are in a flat disk shape
Step 5
Bake for 12-15 mins.

Notes

We like using almond butter for this recipe. It gives a mild nutty flavor without overpowering. However, almond butter can be expensive. Use the nut butter that works best for you.

Sugar substitutes are a good alternative to regular sugar if you are working to manage your blood sugar or want to reduce calories or carbohydrates. We like using monk fruit sweetener, erythritol, or stevia.
