An Update Regarding Seasonal Illnesses

To help prevent the spread of seasonal respiratory illnesses, we strongly encourage all visitors to wear a mask while in ambulatory clinics or inpatient units. Surgical masks are available at hospital and clinic entrances. Patients with respiratory illnesses should also wear masks. Thank you for helping protect our patients, staff, and community.

Quesadillas are very versatile! They can be a meal, side dish or appetizer. Try serving with fresh guacamole, salsa, and plain Greek yogurt (instead of sour cream). 

 

 

Ingredients


Tortillas - 2, 10 inch, whole wheat Refried_beans - ½ cup, vegetarian, low or reduced sodium Cheese - ½ cup, finely shredded

Instructions

Step 1
Place 1 tortilla on a large plate. Spread ½ the refried beans onto ½ the tortilla. Sprinkle ½ the cheese on top of the beans.
Step 2
Fold the tortilla over to make a half-circle shape.
Step 3
Put a skillet on the stove over medium heat.
Step 4
Once the pan is hot, carefully add the filled tortilla and cook until the bottom is lightly browned, about 2 minutes. Flip the tortilla over and cook another 2 minutes. Transfer to a plate.
Step 5
Repeat with the second tortilla.
Step 6
Slice each tortilla into 4 equal wedges. Enjoy!

Notes

  • You can use whatever cheese you have and can add vegetables as well. Leftover peppers and onions are delicious. 
  • Add leftover meats for a non-vegetarian option, such as chopped chicken, steak or pork.
