Ingredients
Pumpkin_puree
- 1 cup
Eggs
- 1 large
Honey
- ¼ cup
Oats
- 2 ½ cups old-fashioned oats, divided (1 cup to make oat flour)
Baking_powder
- 1 teaspoon
Salt
- ½ teaspoon
Spice
- 1 teaspoon pumpkin-pie spice
Mix_ins
- ¼ cup chocolate chips, cranberries or raisins
Instructions
Step 1
Preheat oven to 350°F. Line a baking sheet with parchment paper or a silicone baking mat. Set aside.
Step 2
In a mixing bowl whisk together pumpkin puree, egg, and honey until well combined.
Step 3
Add 1 cup of oats to a blender or food processor and blend until you have a flour-like consistency.
Step 4
Add the oat flour, remaining 1 ½ cup oats, baking powder, salt, and pumpkin pie spice to the pumpkin puree mixture. Stir until combined, but don't overmix. The cookie dough will be very thick and sticky.
Step 5
Add the chocolate chips (or other toppings) and fold into the batter until combined.
Step 6
Drop dough 2 Tablespoons at a time onto the cookie sheets and slightly flatten to the shape you want. The recipe should make about 12 cookies.
Step 7
Bake for 12-14 minutes until lightly browned. Allow to cool on the cookie sheet for at least 3 minutes then transfer to a wire rack to finish cooling.
Step 8
Cookies stay fresh at room temperature for 3 days in an airtight container.
