The Tahini-Maple Sweet Potato pancakes are balanced and satisfying. It can either be prepped the night before or made quickly on the spot, so you don’t have to cut into your sleep in order to make them.

If you’re planning to fast for Ramadan, you know how important it is to fuel yourself with a wholesome suhoor meal before dawn. Because you will be abstaining from any food or drink for long hours, a well-balanced meal that combines a complex carbohydrate with protein and healthy fat is recommended in order to keep you fueled for as long as possible throughout the day.

Ingredients


Sweet_Potato – 1 medium, baked Eggs – 2 Salt – 2 pinches Maple_Syrup – 2 Tablespoons Tahini – 1 Tablespoon Flour – ½ cup, All purpose Baking_Powder - 1 teaspoon Apple - 1

Instructions

Step 1
Scoop out the flesh of 1 baked and cooled medium sweet potato into a small bowl.
Step 2
Add 2 eggs, flour, baking powder and a pinch of salt; mash and stir to combine. Stir together 2 tablespoons maple syrup and 1 tablespoon tahini; set aside.
Step 3
Heat a nonstick skillet over medium-high. Add 1/4 cup batter, cook 3 minutes, gently flip, and cook 3 minutes more. Repeat with remaining batter.
Step 4
Dice 1 small apple. Place 2 tablespoons maple syrup and 1 tablespoon tahini in a small bowl and stir to combine.
Step 5
Top pancakes with 1 chopped small apple and tahini-maple sauce. Serve!
