Ginger has important anti-oxidants and adds an unexpected "zing" in recipes. In addition, it is slightly spicy and has a warming sensation in the body. Give this fun variation on date truffles a try!

Ingredients


Walnuts - ½ cup, chopped Dates - 2 cups, dried Water - ¼ cup Cinnamon - 1 teaspoon Ginger - ½ teaspoon ginger, powdered Clove - ½ teaspoon, ground Vanilla - 1 teaspoon vanilla extract Topping - 1 cup chopped nuts, coconut or cocoa powder for rolling

Instructions

Step 1
Pulse walnuts in the blender or food processor until fine
Step 2
Add dates, water, cinnamon, ginger, cloves and vanilla and blend until smooth and a dough forms. If the dough is too sticky, try pushing the batter down with a spatula. If it continues to stick, slowly add 1 tbsp of water at a time.
Step 3
Chill in the refrigerator for at least 1 hour
Step 4
Using a tablespoon, scoop out the dough and roll into a ball.
Step 5
Roll the balls in shredded coconut, chopped nuts or cocoa powder
Step 6
Keep in the refrigerator or at room temperature.
