Ingredients


Cucumber - 1 large, finely diced Red_onion - 1/2, finely diced Cabbage - ½ large head, finely diced Chives - 3, finely diced Feta_cheese - 3 oz, Reduced-fat, crumbled Greenie_Girl_Dressing

Instructions

Step 1
Start with 1 large cucumber. Finely dice it into small, bite-sized pieces and add to a large mixing bowl.
Step 2
Finely dice 1/2 of a red onion and add it to the bowl with the cucumber.
Step 3
Take 1/2 of a large head of cabbage and chop it finely. Add the cabbage to the bowl with the other vegetables.
Step 4
Dice 3 chives finely and add them to the vegetable mixture.
Step 5
Crumble 4 oz of feta cheese over the chopped vegetables and gently mix to combine.
Step 6
Follow the recipe for the Greenie Girl Dressing (Inspired by Baked by Melissa), then pour it over the salad mixture. Toss everything together until evenly coated.
Step 7
Serve the chopped salad dip immediately with tortilla or pita chips for scooping!
