Oat flour is an excellent way to add soluble fiber to the diet, as well as protein. Soluble fiber is important for heart health as well as gut health. Enjoy!

Ingredients


Banana - 1 medium to large ripe banana Egg- 1 medium egg Oats - ⅓ cup gluten free oats Hemp-seeds - ¼ cup shelled hemp seeds Cooking-spray - Enough to coat waffle iron Maple-syrup - 1 Tablespoon Blueberries - ½ cup blueberries

Instructions

Step 1
Preheat waffle iron.
Step 2
Add banana to mixing bowl and mash.
Step 3
Crack egg in separate bowl.
Step 4
Add egg to mixing bowl and combine.
Step 5
Add oats and hemp seeds to blender.
Step 6
Blend until a flour forms.
Step 7
Add flour to mixing bowl and combine.
Step 8
Grease waffle iron.
Step 9
Add batter to waffle iron and let cook for 2-3 minutes until golden brown.
Step 10
Remove from waffle iron and put aside on plate.
Step 11
Repeat steps 8-10 until all batter finished.
Step 12
Top with blueberries and maple syrup & enjoy!

Notes

Alternative options: 

1. If you do not have a waffle iron, using a pan and making pancakes will work just fine!

2. If you do not have hemp seeds, leave them out and they will still turn out well! There will just be less protein in them.

3. If you do not have maple syrup, microwave frozen berries to top instead!
