Banana Oat Pancakes

Ingredients

  • Old fashioned oats - 2 cups
  • Plain fat-free Greek yogurt - 1 cup
  • Bananas - 2
  • Baking soda - 1 teaspoon
  • Eggs - 2
  • Vanilla extract - 1 teaspoon
  • Cooking spray
  • Frozen berries - 1½ cups

Instructions

  1. Blend oats to a flour like consistency
  2. Add Greek yogurt and bananas and blend until combined. Add baking soda, eggs, and vanilla and pulse until eggs are blended.
  3. Heat a frying pan over medium-low heat. Spray pan, drop the batter using ¼ cup portions onto the pan and cook for 5 minutes or until bubbles form.
  4. Flip them over and cook for an additional 1-2 minutes.
  5. Divide pancakes into three servings of 4 pancakes. Defrost berries in the microwave, if needed, and serve with ½ cup for each serving.
