These pancakes are packed with vitamins, minerals fiber and more! If you don't have an ingredient listed, no problem! Check out our substitution guide below!

Note that if you use oats, you will need a blender to grind them into flour. If you don't have a blender, no problem! You may use 2 cups all-purpose flour instead of oats.

Ingredients


Oats - 2 cups old-fashioned oats (Requires a blender. If you don't have a blender, see substitution guide below). Yogurt - 1 cup plain Greek yogurt Bananas - 2 Baking-soda - 1 teaspoon Eggs - 2 large Vanilla - 1 teaspoon vanilla extract Cooking-spray Berries - 1½ cups, frozen Maple_Syrup - Optional

Instructions

Step 1
If using oats, blend oats to a flour like consistency. If using all-purpose flour, pour into a large bowl.
Step 2
Add Greek yogurt and bananas to the blender or large bowl and blend/mix until combined. Add baking soda, eggs, and vanilla and pulse/mix with a spoon until eggs are blended.
Step 3
Heat a frying pan over medium-low heat. Spray pan, drop the batter using ¼ cup portions onto the pan and cook for 5 minutes or until bubbles form.
Step 4
Flip them over and cook for an additional 1-2 minutes.
Step 5
Divide pancakes into three servings of 4 pancakes. Defrost berries in the microwave, if needed, and serve with ½ cup for each serving.

Notes

Substitution guide:

Oats - 2 cups all-purpose flour OR 2 cups oat flour OR 1 cup all-purpose + 1 cup whole wheat flour.

Greek yogurt - 1 cup plain yogurt (regular, instead of Greek) *note that plain yogurt is not vanilla. Plain yogurt has no added flavor or sweetener.

Bananas - 1 can pumpkin puree OR 1 medium sweet potato, cooked.

Vanilla extract - you may skip this if you don't have it.

Cooking Spray - about 1 Tablespoon oil (canola, vegetable, olive etc).

Berries - You may skip these if you don't have berries.

Maple Syrup - Honey or agave syrup.
