Bruschetta, pronounced broo-sketta, is an Italian appetizer of chopped tomatoes, garlic, and olive oil on toasted bread. It is a great summertime snack or appetizer with really ripe tomatoes. To add in some protein and additional flavor, spread ricotta, goat cheese, or queso fresco on the bread before topping with the bruschetta.
Ingredients
Tomatoes
- 2 medium
Garlic
- 2 medium cloves, ½ teaspoon powdered garlic, or 1 teaspoon pre-minced garlic
Oil
- 2 Tablespoons olive oil or a neutral oil
Salt
- ½ teaspoon kosher or sea salt OR ¼ teaspoon table salt
Pepper
- to taste
Basil
- 4 fresh leaves, optional
Bread
- 4 slices whole wheat sandwich bread or 8 ½” thick slices of baguette
Instructions
Step 1
Wash the tomatoes and basil leaves.
Step 2
Chop the tomatoes, removing the fibrous core (where the stem was attached)
Step 3
Mince the garlic if using whole cloves.
Step 4
Combine the tomatoes, garlic, oil, salt and pepper into a bowl.
Step 5
Toast the bread in a toaster or in a skillet.
Step 6
Divide the tomato mixture on top of the sliced, toasted bread. Tear the basil leaves into small pieces and sprinkle on top.
