A quick and delicious appetizer that’s perfect for any party or holiday gathering, and packed with plant-based protein and fiber from creamy hummus.
Ingredients
Baguette

Olive_oil
- 2 tablespoons
Red_onion
- 1, thinly sliced
Balsamic_vinegar
- 1 tsp
Hummus_of
_choice - one tub
Fresh_rosemary
- Optional, for topping
Instructions
Step 1
Preheat the grill and slice the baguette into ½ inch slices. Brush them with a tablespoon of the olive oil and grill until golden brown on both sides. Leave to cool.
Step 2
Meanwhile, heat the rest of the olive oil in a frying pan. Add the onion, balsamic vinegar and brown sugar. Cook on a medium heat until sticky and caramelised (approximately 10 minutes.)
Step 3
Add a tablespoon of hummus to each bread slice and smooth over the surface.
Step 4
Top with a tablespoon of the caramelised onions and a small sprig of rosemary (if using.)
Step 5
Serve right away!
