 This quick and simple dish makes use of garlic scapes (The long, green, curly shoots emerging from the base of hardneck garlic plants) to create a savory, fragrant side that pairs beautifully with tender zucchini and fresh garlic. A squeeze of lemon juice and zest adds a bright, making this dish a perfect addition to any meal. Garlic scapes are a good source of antioxidants, including compounds like allicin, which is also found in garlic bulbs.

## Ingredients

 Garlic\_scapes - 2 cups, cut into 2-inch pieces Olive\_oil - 2 tablespoons Garlic - 2 cloves,minced Fresh\_lemon\_juice - 1 tablespoon Lemon\_zest - zest of 1 lemon Zucchini- 2 medium- sliced Salt\_and\_pepper - to taste 

## Instructions

Step 1

Heat 2 tablespoons of olive oil in a large skillet over medium heat.

Step 2

Add 2 cups of garlic scapes and sauté for 3-4 minutes, stirring occasionally, until they begin to soften and turn golden.

Step 3

Add 2 cloves of minced fresh garlic and sauté for another minute, until fragrant.

Step 4

Add 2 medium zucchinis (sliced) to the pan and sauté for 5-7 minutes, until the zucchini is tender and lightly browned.

Step 5

Season with salt and pepper to taste. Drizzle 1 tablespoon of fresh lemon juice over the mixture and sprinkle with the zest of 1 lemon. Stir everything together.

Step 6

Cook for an additional 2-3 minutes, allowing the flavors to combine. Serve warm!
