 Sweet potatoes are high in vitamins A (an anti-oxidant and important vitamin for nighttime vision) and C ( also an antioxidant). Not to mention, sweet potato fries are just delicious, with that crispy exterior and silky inside! Enjoy alongside a protein and a non-starchy vegetable of choice.

## Ingredients

 Sweet\_potato - 1 ½ lbs (2 medium sweet potatoes) Oil - 1 Tablespoon canola, avocado, sesame, peanut or light olive oil  Chili\_powder - 2 teaspoon Spice - ½ teaspoon pumpkin pie spice\* Salt - ¼ teaspoon Pepper - ¼ teaspoon ground pepper  

## Instructions

Step 1

Preheat the oven to 400 degrees F. Line a baking sheet with aluminum foil.

Step 2

Cut potatoes in half lengthwise then cut into ½ inch thick fries.

Step 3

Place sweet potato fries in a large mixing bowl. Add oil and spices. Toss until they are thoroughly coated with spices.

Step 4

Spread fries in a single layeron prepared baking sheet. Place in preheated oven. Bake for 30 -35 minutes turning to ensure even cooking.

 

### Notes

\*If you don’t have pumpkin pie spice you can use ¼ tsp cinnamon, plus 1/8 tspnutmeg, plus 1/8 tsp cloves
