 A simple and comforting delight that can be fun to make with kids. Brown rice and berries add dietary fiber and additional nutrients to this recipe. Use any berries you like whether strawberries, blueberries, raspberries etc.

## Ingredients

 Rice - 2 cups leftover brown rice or Minute brown rice (see recipe below) Milk - 2 cups 1% or dairy free milk Vanilla - ½ teaspoon vanilla extract Cinnamon - ¼ teaspoon  Strawberries - 1 cup fresh or frozen  Sweetener - 2 Tablespoons honey or maple syrup  

## Instructions

Step 1

To make minute rice: Pour 1 cup water and 1 cup rice in microwave-safe bowl. Cover with a lid or plastic wrap. Microwave on high for 6 minutes. Wait 5 minutes, or until water is absorbed, then fluff.

Step 2

Put the rice and milk in the pot, put the pot on the stove, and turn the heat to medium.

Step 3

When the liquid comes to a boil, lower the heat to low. Cook, stirring occasionally, until the milk has been absorbed by the rice, about 15-20 minutes.

Step 4

While the rice is cooking, chop the berries. 

Step 5

When the rice is done, stir in the honey, cinnamon, and vanilla.

Step 6

Cool to room temperature and serve topped with berries.
