## Ingredients

 Spinach - 8-10 oz package, frozen Scallion - ½ bunch (also called green onions), thinly sliced or about ⅓ cup onion, finely chopped  Seasoning - 1 teaspoon Italian seasoning or your favorite seasoning blend  Salt - ½ teaspoon Oil - 1 Tablespoon canola, avocado, sesame, light olive oil or cooking spray Protein - 1 lb ground turkey or chicken (93% lean)  Strawberries - 1 pint  Greens - 2-3 oz arugula or your favorite leafy green  Olive\_oil - 3 Tablespoons  Vinegar - 1 Tablespoon balsamic  Honey - 1 teaspoon 

## Instructions

Step 1

Prepare the turkey burger patties by first defrosting the frozen spinach. Drain the spinach and place them into a large mixing bowl. 

Step 2

While the spinach is defrosting, add the Italian seasoning, salt, scallions or onions and ground turkey to the bowl of spinach. Mix with your hands until combined. 

Step 3

Either grill or pan fry the burgers. For pan frying, spray a large frying pan with cooking spray and turn the heat to medium-high. 

Step 4

Form the patties using a 1/4 cup measuring cup and scooping the turkey mixture out of the bowl and onto the pan. Flatten the patties with your hand and cook each burger for 5 minutes. Flip, and cook for another 5 minutes (or until the burger is cooked).

Step 5

While the burgers are cooking, make the strawberry salad. Slice the strawberries. Put ¼ cup of strawberries off to the side and add the rest to a large bowl. Add the arugula, and the rest of the green onions to the bowl. 

Step 6

Add the ¼ cup of strawberries, olive oil, vinegar, honey, and salt to a blender and blend until smooth. Add the dressing to the bowl of strawberries and green and toss until combined.
