 Quesadillas are very versatile! They can be a meal, side dish or appetizer. Try serving with fresh [guacamole](https://www.bmc.org/recipes/guacamole), [salsa](https://www.bmc.org/recipes/fish-tacos-fresh-salsa), and plain Greek yogurt (instead of sour cream).

## Ingredients

 Tortillas - 2, 10 inch, whole wheat Refried\_beans - ½ cup, vegetarian, low or reduced sodium Cheese - ½ cup, finely shredded  

## Instructions

Step 1

Place 1 tortilla on a large plate. Spread ½ the refried beans onto ½ the tortilla. Sprinkle ½ the cheese on top of the beans.

Step 2

Fold the tortilla over to make a half-circle shape. 

Step 3

Put a skillet on the stove over medium heat.

Step 4

Once the pan is hot, carefully add the filled tortilla and cook until the bottom is lightly browned, about 2 minutes. Flip the tortilla over and cook another 2 minutes. Transfer to a plate.

Step 5

Repeat with the second tortilla.

Step 6

Slice each tortilla into 4 equal wedges. Enjoy!

 

### Notes

- You can use whatever cheese you have and can add vegetables as well. Leftover peppers and onions are delicious.
- Add leftover meats for a non-vegetarian option, such as chopped chicken, steak or pork.
