 Use up hard-boiled eggs you've got in your fridge, or make hard-boiled eggs following this recipe. Egg salad is delicious on top of a vegetable salad or a sandwich. It can be a snack with some carrot sticks or pita bread, or part of a balanced meal.

## Ingredients

 Eggs - 2 large  Mayonnaise - 1 Tablespoon, reduced-fat  Yogurt - 1 Tablespoon plain Greek yogurt Paprika - ½ teaspoon Salt\_and\_pepper - to taste 

## Instructions

Step 1

To make hard boiled eggs: Place eggs in a saucepan and cover with cold water. Bring water to a boil then remove from heat. Cover pan and let eggs sit in hot water for 10-12 minutes. Remove from hot water and let cool.

Step 2

Once eggs are cool, chop into very small pieces.

Step 3

For the egg salad: Place finely chopped eggs and all other ingredients into a food processor

Step 4

Blend until smooth.
