 This pudding is made with tofu and doesn't have any dairy, so it is vegan. Tofu comes from soybeans, which are a complete protein source and contain all the essential amino acids. Pumpkins contain vitamin C and are a great source of Vitamin A. This is a nutritious snack that is filling.

## Ingredients

 Silken\_tofu - 16 oz, well drained Pumpkin\_puree - 15 oz canned or fresh Pumpkin\_pie\_spice - 1 teaspoon  Sweetener - ¼ cup pure maple syrup or honey 

## Instructions

Step 1

Add all of the pudding ingredients into a blender and blend until smooth. Refrigerate for anywhere between 2 hours and overnight

Step 2

Top with fresh fruit (optional).
