 Nourishing Greens is a cozy, soul-warming dish made by slowly simmering smoked turkey with broth, vinegar, spices, and plenty of tender collard greens. The long simmer creates a rich, savory cooking broth, while the sautéed garlic and greens add a fresh, comforting flavor. ## Ingredients

 Smoked\_Turkey - 1 pack (wings, legs, neck)\* Vegetable\_Broth - 3 quarts (no salt) Apple\_Cider\_Vinegar - 2 teaspoons Red\_Pepper\_Flakes - to taste Turbinado\_Sugar - 1-2 pinches Black\_Pepper - to taste Avocado\_Oil - 1 Tablespoon Garlic - 4 cloves, minced Collard\_Greens - 4 bushels, washed Salt - to taste 

## Instructions

Step 1

Combine 1 pack of smoked turkey, 3 quarts of vegetable broth, 2 teaspoons of apple cider vinegar, black pepper (to taste), red pepper flakes (to taste) in a pot. Heat to a simmer and taste for seasoning. Adjust as needed.

Step 2

Add 1-2 pinches of turbinado sugar, taste again and adjust as needed.

Step 3

Let it simmer 2-3 hours, or 20-30 minutes in an Instant Pot, until the turkey is falling off the bone.

Step 4

Meanwhile, heat 1 Tablespoon of avocado oil and sauté 4 cloves of minced garlic until golden. Add 4 bushels of sliced collard greens and sauté for 3-5 minutes. Add meat and broth to the pan and let it simmer for 20-30 minutes. Reserve and enjoy the remaining broth (referred to as pot liquor).
