 Sweet potatoes are high in vitamins A (an antioxidant and important vitamin for nighttime vision) and C (also an antioxidant). This is an easy and quick to make version of this starchy vegetable. Serve it as a side dish, or as the star of the show with topping like guacamole, pico de gallo, salsa, shredded cheese, sour cream, and ground meat or Beyond Meat (a vegetarian meat alternative).

 Sweet\_Potato - 1 (medium) 

## Instructions

Step 1

Pierce the sweet potato with a fork (~12 times).

Step 2

Place the potato on a microwave-safe place, and microwave for 6 minutes, flipping the potato over halfway through. Pierce the potato with a fork. If it meets no resistance (if the fork goes through the whole potato very easily), it is done. Otherwise, continue to microwave it in 1-minute increments. 

Step 3

Let the potato rest for 2 minutes. Cut in half and serve.
