## Ingredients

 Heavy-cream - 75 grams  Onion - 100 grams yellow onion, diced Spinach - 255 grams, chopped Garlic - 5 grams, minced  Butter - 30 grams Oil - 15 grams avocado, canola, sesame, olive or light olive oil Nutmeg - 1 gram, optional  Salt-and-pepper - to taste 

## Instructions

Step 1

Heat a large skillet over medium heat.

Step 2

Add oil, butter, garlic and onion; cook and stir until tender, about 5 minutes.

Step 3

Add chopped spinach and and stir to wilt.

Step 4

Stir in the heavy cream and cook down until liquid is slightly reduced and has begun to thicken, about 10-15 minutes.

Step 5

Season to taste with salt and pepper, and an (optional) dash of nutmeg.
